Peanut Butter Eclair Cake

Chocolate and peanut butter in a no-bake dessert?  Sign me up!  Being that we are currently in the 3rd heat wave of the summer, I am trying my best not to turn on the oven.  It’s kind of hard though when you are obsessed with baking.  Anyway, what is this dessert you may be asking that has all of these peanut butter cups in it???

  It is Peanut Butter Eclair Cake by Shugary Sweets.

First, look at that wonderful filling.  It is an easy mixture of vanilla pudding, peanut butter, and cool whip.

This is cake is composed of delicious layers of chocolate graham crackers, a whipped peanut butter filling, and peanut butter cups.

The recipe calls for 6 graham crackers per layer but they don’t fit in the pan evenly.  I just broke a couple up into pieces and placed them randomly.  (When it comes to eating it, it really doesn’t matter how even the layers are).

The 7th and final layer of this cake is a thick, glossy chocolate ganache type frosting.

This has to chill for at least 4 hours so the graham crackers get soft.  While 4 hours is enough, I think overnight is best…if you can wait that long 🙂 .

I obviously had a difficult time cutting a clean piece.  Who cares!  You still get the idea.  You can see the peanut butter cups, the filling, graham cracker layers, and peanut butter filling.  No doubt this cake is absolutely delicious.  The only thing I will do differently next time is use mini peanut butter cups or chop up the peanut butter cups for that layer.  It will make it easier to cut and take a bite.

This cake is very similar to the Kraft recipe Chocolate Eclair Squares that I have made several times.  It is so easy to throw together and feeds a large crowd.  Also, this is a dessert that can easily be adapted to different flavors.  I have a few ideas floating around that I look forward to trying!

Chocolate Peanut Butter Heaven

Chocolate and peanut butter.  One of the greatest combinations ever.  Who doesn’t like it?!  My dad doesn’t, that’s who.  And the only person in the world who doesn’t.  I will never understand.

I had some extra chocolate cupcakes from an order I had so I thought I would have some fun with them.  I went kind of crazy, trying to put as much as I could into this cupcake.

First, I made chocolate ganache.  it is equal parts heavy cream to chocolate chips. I did ¾ cup for each, and I have a ton left over.  Maybe I will make truffles with it!  I used semi-sweet chocolate chips but you could use whatever you prefer.  I heated the heavy cream to just before it started to boil.  I poured it over the chocolate chips and stirred so they would melt.  I then added a dash of vanilla.

I let that cool for a little while so it would thicken up a bit.  While I waited for ganache, I made peanut butter buttercream.  I used the Wilton recipe.  I chopped up a bunch of peanut butter cups and mixed them into about half of the buttercream.  I just eyeballed it.  This part of the buttercream was used for the filling.  So I cut out a whole in the middle of the cupcake and put about a teaspoon or so inside the cupcake.  I tried to put the piece I cut out back on top but it just wouldn’t fit.  The buttercream was thick enough that it stayed in anyways.  Then it gets really good.  I dipped the cupcakes into the chocolate ganache and topped them with more chopped peanut butter cups.  To finish it off, I put a swirl of peanut butter buttercream on top, drizzled it with ganache, and put a mini peanut butter cup on top.

This is one heavy duty, delicious, cupcake!

And as you can see, there isn’t much cake after I cut out some of the middle.  I could reduce the amount I cut out and put less filling so it wouldn’t be so heavy.  That’s no fun though.  Either way it is so good!
