Oreo Marshmallow Cheesecake

National Cheesecake Day was on July 29th.  And I missed it, just like I did last year.  But I figured if I made a cheesecake dessert within the week, then I am good.  Ready to have a baby very soon, I still want to bake but need recipes that are quick and easy.  That is why I chose to make this Oreo Marshmallow Cheesecake by Nutmeg Nanny.  Another reason I wanted to make this is the fact that it has marshmallow in it.  I thought this was different and was curious as to how it would add to the dessert.

Start with a delicious Oreo cookie crust.

Melt your marshmallows and milk.

Combine with cream cheese and vanilla bean paste, then fold in Cool Whip.  Spread into the pie crust.

Not only is this dessert very easy, especially because it is no-bake, but it is delicious.  There is just a hint of the marshmallow flavor combined with the taste of a cheesecake!  I think next time, I will put crushed Oreo cookies right in the cheesecake.

And of course with all of the pies I try to slice, it looks like a mess.  Never affects the taste though!

Homemade Marshmallows and Hot Chocolate

I have been feeling like I need a baking challenge lately. I wanted to make something that I have never done before so I decided to make my own marshmallows. From Averie Cooks, I recently won the book Pure Vanilla by Shauna Sever, of the blog Piece of Cake. The recipe in this book for marshmallows looked so easy I thought for sure I would mess something up. But to my surprise, I didn’t!

The smell of the “batter” was amazing! It smelled and tasted like Fluff. That’s how I knew I did this right.

Once the marshmallow was set, I used a pizza cutter to make the marshmallow cubes.

After I made the marshmallows, I didn’t feel as if it was a challenge at all. That’s how simple it is! I look forward to making them again and trying some different things, like dipping them in chocolate.  You can find a recipe for Vanilla Marshmallows on here or pick up the book Pure Vanilla!

Now what is the best thing to go with marshmallows? Hot chocolate of course! The latest Sundays with Joy recipe is the Perfect Cup of Hot Chocolate. The title of this recipe couldn’t be more accurate. It is a rich, creamy, steamy mug of hot chocolate made with a combination of white chocolate chips and semi-sweet chocolate chips. Also, the added espresso powder adds a wonderful touch.

Add the homemade marshmallows and you have the perfect treat for a wintery night!

This tastes amazing as the marshmallow melts into the chocolate.  And then use a spoon to scoop it up…yum!

I made both the hot chocolate and marshmallows about a week before Christmas and have been anxious to share them with you.  Christmas just snuck up on me and I have no idea where the time went!  I hope everyone had a great holiday and enjoyed lots of delicious treats!
