Chocolate Cupcakes

In January, I was honored to make a cake and cupcake tower for my little brother’s wedding.

However, after making close to 200 cupcakes, I did not want to look at another one for a looong time!  And I hadn’t until I saw that one of my favorite blogs, Your Cup of Cake, released its first cookbook.  Of course I had to have it.  What is so great about Lizzy is that she starts all of her recipes with box cake, but jazzes it up with additional ingredients and flavors.  You would never know it’s a box cake and all of the recipes are so easy!!!  Also, what’s great about the book is it is hardcover with a spiral binding.  I know, I’m a dork!

My sister in law recently had a little get together and asked me to bring some cupcakes.  From the book, I made chocolate cupcakes with chocolate frosting.

Chocolate Peanut Butter Heaven

Chocolate and peanut butter.  One of the greatest combinations ever.  Who doesn’t like it?!  My dad doesn’t, that’s who.  And the only person in the world who doesn’t.  I will never understand.

I had some extra chocolate cupcakes from an order I had so I thought I would have some fun with them.  I went kind of crazy, trying to put as much as I could into this cupcake.

First, I made chocolate ganache.  it is equal parts heavy cream to chocolate chips. I did ¾ cup for each, and I have a ton left over.  Maybe I will make truffles with it!  I used semi-sweet chocolate chips but you could use whatever you prefer.  I heated the heavy cream to just before it started to boil.  I poured it over the chocolate chips and stirred so they would melt.  I then added a dash of vanilla.

I let that cool for a little while so it would thicken up a bit.  While I waited for ganache, I made peanut butter buttercream.  I used the Wilton recipe.  I chopped up a bunch of peanut butter cups and mixed them into about half of the buttercream.  I just eyeballed it.  This part of the buttercream was used for the filling.  So I cut out a whole in the middle of the cupcake and put about a teaspoon or so inside the cupcake.  I tried to put the piece I cut out back on top but it just wouldn’t fit.  The buttercream was thick enough that it stayed in anyways.  Then it gets really good.  I dipped the cupcakes into the chocolate ganache and topped them with more chopped peanut butter cups.  To finish it off, I put a swirl of peanut butter buttercream on top, drizzled it with ganache, and put a mini peanut butter cup on top.

This is one heavy duty, delicious, cupcake!

And as you can see, there isn’t much cake after I cut out some of the middle.  I could reduce the amount I cut out and put less filling so it wouldn’t be so heavy.  That’s no fun though.  Either way it is so good!
