Pumpkin Bundt Cake with Cinnamon Glaze

A few weeks ago, we had the first “fall like” day.  A beautiful sunny day with temperatures in the low 70’s.  What does that mean?  It means it is time for fall baking.  This is one of my favorite things about the season.  I can’t get enough of making pumpkin and apple desserts.

An upcoming Sundays with Joy recipe is Pumpkin Bundt Cake with Cinnamon Glaze by Joy the Baker.  Although it is not due to be made until mid-October, it seemed like the perfect first recipe to make for the fall season.  So on that beautiful first “fall like” day, I took advantage of both kids sleeping.  I was actually able to bake something from start to finish without any interruptions.  This never happens!

This cake comes together so quickly.  And the best part about it is all of the wonderful spices that go into it, including cloves, nutmeg, ginger, and cinnamon.  Nothing but the smells of fall!

A cinnamon glaze tops off the cake.  The recipe indicates that you should drizzle the glaze over the cake.  I could not get it thin enough to drizzle so I spread it like a frosting.

I love how the frosting looks on the cake.  Makes it look somewhat fancy :).

And this is another cake, like this Browned Butter Glazed Banana Cake, that could be eaten for breakfast or as a dessert.  It also pairs well with a hot cup of coffee!

Now that I have a pumpkin recipe done, it is time to make an apple one.  I am not sure which I like more, pumpkin or apple.  What is your favorite???

 

 

 

Oatmeal Cookie Pancakes

I love breakfast.  I would be happy to eat it for every meal.  I am not talking about a big breakfast with eggs, toast, bacon, etc.  I am content with a bowl of cereal or a bagel.  French toast or chocolate chip pancakes will satisfy me as well.  But a breakfast that tastes like an oatmeal cookie?  Is that possible?  Sure is!

This week’s Sundays with Joy recipe is Oatmeal Cookie Pancakes.  This recipe can be found in the Joy the Baker cookbook and on her blog as well!  This is an extremely easy pancakes from scratch recipe.  No pancake mix necessary!  And you will most likely have all of the ingredients in your kitchen.  I did.

I was right.  My 2-year-old son, husband, and I had a wonderful breakfast the morning these were made.

I wish my final product picture made them look more appetizing.  It doesn’t do it justice.  But trust me, if you want to have a special breakfast for whatever reason, Oatmeal Cookie Pancakes are the way to go!  Remember, you can find the recipe in the cookbook or on the Joy the Baker blog!

Banana Coconut Cream Pie

Bananas have entered my baking world once again.  This is an ingredient that seems to be the star of a majority of the baked goods I have made over the past year.  It is Joy the Baker’s Banana Coconut Cream Pie which happens to be this weeks Sundays with Joy recipe.  And it is recipe #52 which means we are now more than halfway through the cookbook!

I am a big fan of banana breads but I am not a big fan of actual bananas, which this pie has in it.  I still wanted to make it as is because I know plenty of people who would enjoy it.  And this is not a quick recipe because there is chilling involved, but it is well worth it.

First, a delicious graham cracker crust with toasted coconut right in it.

Then the cream filling.  This is what makes this process long, only because it has to completely cool before putting it in the pie crust.

This cream filling also has toasted coconut and sliced bananas folded right into it.

To top off this beautiful pie, a fresh whipped cream with toasted coconut sprinkled on top.

I love how this pie came out!  It’s so pretty!

Of course I tried it and if I was a lover of actual bananas, I would go crazy over this.  It is good and the feedback that I got from the people I shared it with said it was absolutely delicious and fresh tasting.  Love it.  Please make sure you pick up the Joy the Baker cookbook to make this pie!
