Peach Cobbler Muffins

It took a little over a year, but the Sundays with Joy group  has baked 50 of the  100 recipes in the Joy the Baker Cookbook!  We started in April 2012 but it really doesn’t seem like it has been that long.  It has been fun looking forward to the next recipe every other week.  And I am proud to say that I have not missed a recipe yet!  Recipe number 51 is Peach Cobbler Muffins and since I haven’t shared one of the recipes in a while, I thought now would be a good time.

I am not really a peach eater but that wasn’t going to prevent me from making these muffins.  And I can tell you I am definitely not crazy about peeling peaches.  It added too much time to the process.  I can’t find the website that I used to follow the steps for this, but if you Google it, a ton of tutorials come up.

First, place peaches in hot water for 10 minutes.

Then, put peaches in an ice bath for about 5 minutes.

Now peel the peaches and dice them.  I am not a good peeler or dicer so it probably took me twice as long as it should have.

Once this was all done and the peaches were diced, the recipe moved along quickly, which I liked.

A wonderful bonus to this recipe is the use of brown butter.  I love brown butter.  It is a fantastic addition to any dessert.  This is mixed with the dry and wet ingredients.

And you can’t forget the sugary, slightly crunchy crumble on top of the muffin!

As with any other recipe from Joy the Baker, these muffins came out great (even if I am not crazy about peaches)!

Skillet Peach Cobbler

In honor of August being national Peach month, I felt that it is appropriate to make a dessert with peaches.  To be honest, I am not even sure I have ever tried a peach.  If I did it was a long, long time ago and I don’t remember, which means I probably didn’t like it.  So in addition to celebrating national peach month, using this fruit goes along with the idea of me trying new things in my baking.

A couple of weeks ago I had picked some peaches at Smolak Farms that I had intended on using for a dessert.  But Matt ate them all…but one.  No problem.  I stopped in at Mann Orchards right down the street from me.  This farm stand has awesome fruits and vegetables as well as a bakery where they make breads, coffee cakes, cookies and other treats like that.  They also serve lunch and make gift baskets with jams, spreads, etc.  They have amazing apple cider donuts that I look forward to having once fall hits.  They are also very famous for their pies.  At Thanksgiving time they have a cop detail in the parking lot because it is so crazy.  If you live nearby, be sure to check them out.  Anyway, I restocked on peaches at Mann’s for this dessert.

I was asking Matt what kind of peach dessert he wanted me to make.  Peach coffee cake?  Peach muffins?  Peach cobbler?  Peach cobbler!  Or more appropriate, “Peach Cobbla!”  As I was looking for recipes and continued to make more suggestions, they were shut down.  He loves peach cobbler and I just had to make it.  And of course I needed to use my amazing new cast iron skillet.  Which, by the way, I was told I didn’t really need it but someone has realized that it is awesome.  Especially after making an amazing deep dish pizza in it.

I found a really simple recipe at the blog Mama StephF’s  for the cobbler.  To prepare for this recipe, the peaches need to be peeled and sliced.  I have never done this before so I googled it and it looked pretty easy.  First, score the bottom of the peach.  Then, blanch the peaches for about it minute.  Put them in cold water and then peel the skin back.  Slice.  Once again, something that should be quick and easy took FOREVER!  I don’t think I kept the peaches in the hot water long enough because the skin did not peel back as easy as I thought it should.  And then slicing them, forget it.  I butchered those poor things.  But that’s ok!  I’ll just keep practicing and it doesn’t change how they taste!

Here is the recipe for Skillet Peach Cobbler (Adapted from Mama StephF’s Blog):

  • ½ cup (1 stick) unsalted butter
  • 2 cups peach slices (I used 5 peaches)
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • Pinch of salt
  • 1 tsp ground cinnamon
  • 1 cup milk
  • 1 tsp vanilla extract

(note: The original recipe calls for 4 cups of peaches but I used 2 because I was afraid it would overflow.  This was not even close to happening so I think you can definitely put in more peaches if you want.)

Pre-heat the oven to 350 degrees.

In a medium bowl, mix the flour, baking powder, cinnamon, and salt.  Whisk to combine thoroughly.  Then add the sugar, milk, and vanilla.  Mix to combine.

Place the skillet on the stove over low-medium heat.  Place the butter in the skillet and melt it.  As soon as it is melted, make sure the skillet is coated with butter.  Then, pour the butter into the flour mixture.  Stir until well combined.

Pour the batter into the hot skillet.  Add the peaches to the middle of the batter.

Bake for 45 minutes or until the top is golden brown.  Insert a skewer in the center.  If it comes out clean, it is done.

Remove from the oven and allow it to cool.

To remove the cobbler from the skillet, I flipped it onto a plate and then on to another plate to put it right side up.  I waited for it to cool completely in case it fell apart.

I am very happy with the way the cobbler came out.  Matt had it warm with vanilla ice cream and reported that it was very good.  First cobbler….a success!  I am going to give it a try with other types of fruit so watch out for that!
