I love recipes that allow me to start it one day and finish it the next. Cookie recipes are good for this. So when an email for these Toasted S’more Chocolate Chip Cookies by Sally’s Baking Addiction arrived in my email last week, I knew I had to find a way to make them, quickly. Knowing I would have a half day at work this week, I made the cookie dough the night before to chill. When I got home the next day, without kids, I was able to bake the cookies!
The base of this cookie recipe is a famous one on Sally’s blog and I have already made it several times before. This recipe is also in her first book, and I’ve made Potato Chip Toffee Chocolate Chip Cookies and these M&M Chocolate Chip Cookies. But I would have never thought to add toppings like this to a cookie.
I have a small torch so I was able to toast the mini marshmallows. Careful, graham crackers can catch on fire too! Some marshmallows were a little more toasty than others but still edible!
I love how these cookies came out. They are on the larger size, about 3 tablespoons of dough each. And you need a larger cookie to hold the chopped chocolate, mini marshmallows, and crushed graham crackers. What I also really like about these cookies is how soft they are. I am always nervous when baking them because I can’t tell if they are done are not. But they are supposed to be like that.
Toasted S’more Chocolate Chip Cookies are a great way to get that s’mores fix, just in cookie form. And if you are a fan of chocolate chip cookies (and who isn’t?!), these are even better! This recipe is so easy I hope you give them a try!
