Food Prep and Meal Plan #4

This week I didn’t do much prep ahead of time.  Knowing that it would be a busy weekend, I tried to plan my meals that didn’t require too much work or preparation.  However, I did do the normal prep for breakfast, lunch, and snacks.

Breakfast, lunch, and snacks:

  • FREEZER MEAL OPTION! Western omelet muffins from The Skinnytaste Cookbook
  • yogurt cups
  • fruit cups
  • veggies with hummus
  • almonds
  • FREEZER MEAL OPTION! Cinnamon roasted butternut squash soup from The Skinnytaste Cookbook (7 servings from one batch and it can easily be doubled!)
  • Shakeology

Here is my menu plan for this week:

  • Burgers (from the freezer) on the grill with red potatoes and a vegetable
  • Shake n’ bake pork chops with a side salad from the cookbook Eat What You Love Everyday
    • Prep ahead – prepare coating
  • Turkey meatloaf (from the freezer) with mashed sweet potato
  • BLT salad with avocado and grilled chicken from The Skinnytaste Cookbook
    • Prep ahead – grill chicken, cook bacon, and chop vegetables
  • Spinach and ham stuffed potatoes from Cooking Light Magazine
    • Prep ahead – shred the cheese and chop the ham
  • Homemade pizza with Trader Joe’s tater tots
    • make pizza dough (time permitting), shred the cheese and chop veggies if using
