Cookie Butter Truffles

It’s no secret that I am a huge fan of cookie butter from Trader Joe’s.  So when it was brought to my attention that cookie butter cream cheese exists, I was more than excited.  Luckily, I had a trip planned the next day.

What I was going to do with this cream cheese, I wasn’t sure.  But then a friend of mine said he was going to make oreo truffles using it.  Genius!  Then I remembered I had a box of Speculoos cookies that needed attention.  So I decided to make Cookie Butter Truffles.

I ground up one box of the cookies in the food processor.  I then took the whole container of cream cheese (minus the spoonful I took to try it) and combined it.  I found that the easiest way to do this was with my hands (just cleaned of course).  I then let the mixture chill for a couple of hours.  After that, I used a 2 tablespoon cookie scoop to make the balls.  I wish I had made them a little smaller but I was also a little lazy and knew I would be done quicker if I made them bigger.

After I scooped the balls, I stuck them in the freezer for about a half an hour.  This is so they would hold their shape when I dipped them in chocolate.  For the chocolate, I used candy melts.  I didn’t measure out how much I used.  I just filled about half of a 2 cup glass measuring cup and then added a few more to melt as needed.

Once I dipped them in chocolate, I put them back in the freezer.

I took out a few at a time from the freezer to dip in the chocolate so they would stay cold.

I think it goes without saying that these were amazing!  I am going to make these again and will make them with mini white chocolate chips inside and dip them in white chocolate.  Doesn’t that sound great?!

I kept these stored in the freezer in a small freezer bag.  Makes it easy enough to grab a one (or 3) if you want a little treat!
