Dark Chocolate Raspberry Cheesecake Bars

I can’t believe that July 4th has already come and gone.  Does that mean that summer is pretty much over?!  Well, I went baking crazy during this weekend.  Dark Chocolate Raspberry Cheesecake Bars were one of the things I made.

On the Friday before the 4th, we took the kids to Smolak Farms and picked some raspberries while we were there.  I knew exactly what I wanted to make with them.

In the Sally’s Baking Addiction cookbook there is the recipe for these Dark Chocolate Raspberry Cheesecake Bars.  And I already had the remaining ingredients so I began working on them as soon as I got home.  On a side note, about 2 months ago I was not a fan of raspberries.  I would tolerate them as part of something, like a dessert of course.  But now, I love them.  What happened?!

I always get nervous baking anything cheesecake related.  I never know if it is really done or not because it is supposed to be a little “jiggly” in the middle.  And my oven is weird.  It always bakes a couple of minutes quicker than the time given.  I have it figured out pretty good, but I am not sure how that would work with a real cheesecake.  This is why I have put off making one.  batter before bakingpost-bake

I think I may have baked these just a couple of minutes too long, because I just wasn’t sure.  The tops cracked a bit and I think that’s why.

Despite the cracking, these bars came out great.  It has a delicious Oreo crust and dark chocolate chips to accompany the raspberries.  And we all know what a fan of dark chocolate I am right now.
