I feel like I have been making nothing but chocolatey baked goods lately. I don’t think there is anything wrong with that, but I wanted to throw something in the mix. I did that with these Lemon Poppy Seed Muffins. This recipe is from the cookbook Sally’s Baking Addiction and was super easy to throw together.
The most work involved in these is zesting and squeezing the lemons.
With poppy seeds, I could take them or leave them. But they are a nice addition to these muffins. Hence the title. And of course, coarse sugar on top for a nice crunch. Love that.
