I have so many yummy things lined up to blog about, but these Chocolate Chip Cookie Dough Brownies have moved to the front of the line!
The recipe comes from The Cookie Dough Lover’s Cookbook, one of the first cookbooks by a blog – Love and Olive Oil – that I purchased and love (actually I love them all). I’ve only made a few recipes from it, such as these Cookie Dough Whoopie Pies. So I decided to dig it out and tackle some more.
I was home with my little guy who wasn’t feeling so great. Even three year olds need a mental health day. So of course I had to come up with something to make while he napped. There are a few in the book that are on my radar to make, but these were the winner.
There are a few steps involved, but they aren’t difficult and are worth it.
First, you have the brownie layer and let it cool. While it cools, make the delicious, eggless cookie dough layer and spread it on the brownie.
It’s just not complete yet. A dark chocolate ganache is necessary.
The ganache hardens, making a thick chocolate layer on top. I am always skeptical when I make layered desserts like this that when I cut into it, it is going to be a disaster. Not this time :).

And they taste just as good as they look. They are rich, super chocolatey, and decadent. And big! They are made in an 8 inch square pan but I cut 9 bars. I usually do 12.
