Memorial Day weekend. The perfect opportunity to cook and bake lots of delicious things. We had a small cookout on Saturday which allowed me (and with the help of Matt) to try out some new recipes.
On Friday, I got this recipe for Grilled Kale BLT Dip emailed to me from the blog How Sweet It Is. I was originally going to make an avocado corn salsa, but when I saw this, that quickly changed.
Along with the other cookout staples, such as potato salad and hamburgers and hot dogs, I made 3 desserts. For seven people. I know, I’m crazy. But I can never decide and I want to make everything.
First, I made my favorite go-to bar recipe by Averie Cooks. I changed it up by using chopped pretzels and patriotic M&Ms.
The second dessert I made is Lime Bars Matt found in his Craft magazine. These were made with a summer ale, along with a summer ale whipped cream.
And last but not least, the dessert that this post is really all about. S’mores Lasagna. This has been on my to-do list since I first saw it last summer but never got around to it. And I can’t get enough of s’mores recipes lately. I’ve recently made these Campfire Cookies and this S’mores Cake. And now this. I love making these types of desserts and have made all of them from Beyond Frosting. Check out the Pumpkin Pie Lasagna and Chocolate Peppermint Lasagna. I’ve also made this Apple Pie Lasagna but but didn’t blog about it.
Although there are a few steps, this dessert is easy to put together. It’s no bake, can make it ahead of time, and looks impressive.
Yup, nine layers in total that include graham crackers, chocolate pudding, and a toasted marshmallow filling. It’s topped off with chocolate whipped cream.
I was hoping my the marshmallows on top would have been more gooey. I could have melted them more but I was afraid they would turn into a melty mess and I wouldn’t be able to move them from the microwave to the pan.
The longer this dessert sits, the better. I cut into it about 5 hours after I first put it in the refrigerator and all the layers were pretty soft except for the bottom one.
But just a few more hours later than that (yes, I had a second piece), and definitely by the next day, it was perfect.
If you are headed to any cookouts this summer, this would be the perfect dessert to make. Along with all the reasons I mentioned above, it makes a ton!
