I must be really craving summer because I made two s’mores related desserts in one weekend. Last week I made these campfire cookies. The same day, I made this amazing S’mores Cake from the book Dessert Mash-Ups.
I made this the Saturday before Mother’s Day. I told Matt I needed to make this cake because it was Mother’s Day (I will find any excuse to bake something), which was a ridiculous statement because I probably would have made it no matter what, which Matt kindly pointed out :).
The cake itself is very easy to make. It starts with a graham cracker crust filled with a brownie like cake. So, so good! But I was very intimidated by the meringue topping. I had never made a meringue like that and I imagined a complete disaster. I was originally going to make this cake a while ago and was prepared to cheat and make an easy marshmallow frosting instead. But I never got to it. I am glad I didn’t because when I actually made it I was ready to tackle the meringue topping.
Just like the recipe states, the meringue is easy! My wrist was sore from whisking non stop for 10 minutes and I was very hot standing over the double boiler, but it was worth it! I couldn’t believe it came out right on my first try and how much it actually tasted like marshmallow. I am so glad I didn’t take the “easy” way out. And even though it is not on my baking bucket list, I can always add it and cross it off!
And how about those toasted meringue tips?! I was going to skip this step because I didn’t think it would matter. But it brings the whole cake together and makes it a legit s’mores dessert. To make the toasted look, I just used a mini torch from Home Depot but a broiling it would work fine too.
I absolutely love how this dessert came out. It looks amazing and tastes incredible – exactly like a s’more, just in cake form! It makes me even more ready to make those fires (or have Matt make those fires) and make some real s’mores this summer.
I would definitely consider buying the book Dessert Mash-Ups if you want to give this cake a try. I have made several recipes from it and they are all so easy and come out great! To stay with the s’mores theme, this incredible looking s’mores lasagna has been on my to-do list since last summer. I will be making this very soon!
