Campfire Cookies

There are two out of the four Baked books that I have not baked from yet.  So many good recipes makes it so hard to decide!  That’s why it’s taken me so long to get to the next one.  My first was the Baked Brownie and the second was the Vanilla Bean Malt Cake.  The third recipe is Campfire Cookies from Baked Occasions.

These campfire cookies are like s’mores in cookie form.  The dough has crushed graham crackers, mini marshmallows, and chocolate chips.  And with the weather being in the 70’s and 80’s lately, they seem perfect.  I am so ready for summer!

When the cookies baked, the marshmallows got very gooey, which made me panic a little bit.  The dough had been chilled so for some reason I wasn’t expecting that to happen.  But it does make sense that it would.

I can’t stop making cookies lately.  I think what I love is that you can make the dough and keep it in the fridge or freeze it until you are ready to bake them.  That is what I did with this batch.  I threw the dough together and baked them the next day when I had more time.

These cookies are delicious.  You can definitely taste the graham crackers in the dough and the marshmallow is nice and gooey.  These would be great to bring to a summer cookout.
