Since it’s Cinco De Mayo, I thought it would make sense to have a Mexican Fiesta for the latest date night in this past weekend. I love making Mexican food. It’s so easy and there are so many ways to keep it healthy. I normally make tacos, quesadillas, and enchiladas. But making this date night in menu was all new to me.
The main dish was burritos, loosely based on this recipe. They were filled with chicken, black beans, rice and cheese, with corn on the cob on the side. I used this Spanish rice recipe (no picture – doesn’t look very appetizing, but it was!) that was going to be on the side but decided to put it in the burrito. Oddly enough, I never had an actual burrito, but it’s not much different than a quesadilla.
Of course I need to give Matt credit where it is due. He assembled and cooked the burritos and cooked the corn. This date night was a joint effort!
And now to my favorite part of any date night…dessert! I made a tres leches cake from the Dessert for Two cookbook. The recipe can also be found on the Dessert for Two blog. I not only have never made this type of dessert, I have never tasted it.This was delicious! And I decided to just frost the whole cake with the whipped cream. Why not, right?!
Matt and I both loved everything about this menu. Everything was easy to make, we had fun doing it together, and it all tasted great!
