peanut butter and toffee chip brownies

Oh, these brownies.  This is something I quickly put together while the oven was still on and the kids were still sleeping.  I had a bag of Trader Joe’s peanut butter chips sitting in my cabinet for a while that I wanted to use.  I also got King Arthur Flour cocoa powder that I had been wanting to try so it was perfect.  I used this brown recipe from Sally’s Baking Addiction.

Then they had just come out of the oven and we were on our way out.  I didn’t want to leave them to cool where the dog could get them so I was carrying the pan on the cooling rack into another room.  I am sure you can imagine what happened next.  Of course the pan slipped off the cooling rack.  And the pan was so hot I had a hard time getting a good grasp on it to save it.  I almost wanted to take a picture but the dog was immediately all over this and the kids ran over when I cried out “Nnnnooooo!!!”  They are just brownies so I know it’s no big deal.  It’s more the time and the ingredients that I lost that I was upset about the most.

And they just looked so good and fudgy with those large peanut butter chips that I wanted to make them again.  I had some left over chips but not enough (about 1/2 cup) so I threw in about a 1/2 cup of toffee chips as well.

These came out just as good the second time around!

two brownies top viewI love that I have them stashed in the freezer so I can take one when I want :).  And next time, I think I will be a lot more careful when transporting my freshly baked goods!
