Carrot Cake Whoopie Pies

Easter is in a week.  Really?  And it will be April?  Time is flying by way too fast!  But Easter time means fun baking and lots of carrot cake and coconut.  I kicked it off with Carrot Cake Whoopie Pies.  This is a really easy recipe out of the Make It With A Cake Mix cookbook.

The only thing about making carrot cake desserts that I’m not a fan of is grating carrots.  It gets everywhere!  But other than that, I was able to get these cookies in the oven in no time!

The filling came together quick as well.  It is simply cream cheese, butter, powdered sugar, and vanilla extract.

And of course I always have left over filling!  Whenever I make whoopie pies, I am afraid of putting on too much and running out.

Another nice thing about this recipe, or any whoopie pie recipe, is that it can feed a crowd and you can freeze them if you want to make them ahead of time.  And I like that these are bite size.
