Pi(e) Day – Date Night In #3

For Valentine’s Day, I gave Matt a jar with various date night in ideas to pick once in a while.  Some of these include board game night, card game night, movie night, and various food theme ideas.  Along with doing a 3-course meal for a Date Night In once in a while, we will do these.  Creating a pizza was the first one that Matt picked out of the jar.  And it happened to be Pi Day, so it worked out perfect!

Before the pizza I made nachos, which is an appetizer we commonly get when we go out.  I used shredded cheddar and monterey jack cheese and topped it with sour cream, diced tomatoes, scallions, and cilantro.

I was so excited to come up with a pizza creation for Matt.  I thought about what he would order if we went out for dinner, and I came up with a blue cheese bacon burger.  So I turned that into a pizza.  The sauce was blue cheese dressing, hamburg, crumbled blue cheese, chopped bacon, and caramelized onions.

The pizza Matt made for me was inspired by a panini I like to make.  He had trouble coming up with a sauce, but used sweet chili sauce, which worked great.  There was shredded Gruyere cheese, chopped bacon, and caramelized onions.  I am obsessed with caramelized onions right now.

And no meal is complete without dessert.  I made a mini chocolate chip cookie cake (from Dessert for Two), which is something I’ve always wanted to try.

Sadly, I think I left the cake in the oven a tad too long because the edges got a little crispy and the center sunk in.  Nothing I couldn’t fix, though!  I topped it with vanilla ice cream, hot fudge, and whipped cream – all homemade!
