Brown Butter Cinnamon Chip Blondies

Sometimes a quick recipe is just as good as a recipe that takes hours to make.  And there are days where you are looking for a dessert but don’t want to be in the kitchen all day.  That is where these blondies come in.


Blondies are usually very simple to put together.  You got your dry ingredients and your wet ingredients.  Simply combine them and you are good to go.

I found a recipe for Brown Butter Vanilla Bean Blondies at Savory Simple that I slightly adapted based on what I had at home.  This led me to Brown Butter Cinnamon Chip Blondies.

What you need:

  • 1 stick of unsalted butter
  • 1 large egg, beaten
  • 1 cup of light brown sugar, packed
  • 1 tablespoon of vanilla bean paste
  • 1 cup of all-purpose flour
  • ½ teaspoon of baking powder
  • ⅛ teaspoon of baking soda
  • ⅛ teaspoon of salt
  • ¼ cup mini cinnamon chips (they don’t need to be mini but that is what I had)

What to do:

  • Line an 8×8 pan with aluminum foil and coat with non-stick spray.  Set aside.
  • Pre-heat the oven to 350 degrees.
  • In a small saucepan over medium heat, brown the butter.  Allow it to cool for 5-10 minutes.  For a how to on brown butter, you can find a description in the directions of a recipe here.
  • In a small bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a medium bowl, whisk together the cooled brown butter, egg, brown sugar, and vanilla bean paste.
  • Fold the flour mix in to the wet ingredients until just combined.
  • Carefully fold in the cinnamon chips.
  • Pour the batter into the prepared pan and spread to make it even.
  • Bake for 20-25 minutes (mine took 22) or until a toothpick inserted comes out clean.  Allow to cool completely before cutting.
  • Enjoy!!!


These are absolutely delicious.  They are soft and slightly gooey (but not because of being undercooked).  And the cinnamon chips compliment the flavor of the brown butter.


I can imagine that this blondie would taste great warm with vanilla ice cream on top.  Mmmmm……..
