Banana Zucchini Pudding Cake

Are you sick of bananas yet?  I hope not because I have another banana recipe for you!  Just like all of the previous ones, this is from Averie Cooks.  This Banana Zucchini Pudding Cake makes number 7 in her Banana Bread Fest.  This recipe is similar to the Zucchini Banana Bread recipe except in a cake form.  And there are chocolate chips in it, which I love!

As you can see, this cake baked beautifully!  And as with all the others, you must have a glaze on it.  This has a browned butter vanilla glaze which is absolutely delicious.

I tried to make the glaze look all fancy by drizzling it diagonally with the whisk.  That did not work out so well.  But still, this cake looks pretty good.

Although it is considered a cake, I cut it up into brownie size pieces.   It just seemed like the right thing to do.

I think this cake is very good.  The chocolate chips and the banana are a great comination in this cake.  However, it is REALLY moist.  It’s almost difficult to pick up and eat because it just sticks all over your hands.  I think what I would do differently next time to avoid this is squeeze a lot of the water from the zucchini.  However, my little guy Luke didn’t seem to mind!  And he somehow got chocolate on his bum while sitting in his chair.  Who knows!  If you want to give this cake a try, please check out the recipe here!

  1. I was just thinking when I was looking at your zucchini, WOW, it is so moist looking! I mean, it looks like you could practically wring it out it looks so moist! Apparently the San Diego zucchinis are a lot drier 🙂 I think in your case, wringing it out OR not grating it so fine (I called for coarsely grated which won’t break down the fibers so much and will keep it from getting so wet) will help you. Or adding a little more flour. Lots of little tweaks that can be made but overall, doesn’t look like that was too big of an issue because it looks great! And yes, it was falling-apart eat-with-your-hands soft for me, too! I loved it! Glad you enjoyed this and thanks for making it so fast! Wow! 🙂
