Another delicious recipe without actual pumpkin….love it! Don’t get me wrong. I love baking with pumpkin puree. But it’s cool when you can use other ingredients to get a similar flavor. Just like the pumpkin cupcakes I recently made, these Pumpkin Streusel Pudding Cookies by Chef in Training uses a “secret” ingredient to get that great pumpkin flavor. And that would be pumpkin spice instant pudding mix.
When I went to go buy it, I panicked because I didn’t see it on the shelf. I immediately thought, “Of course! I can never find anything when I want it!” But I turned around, and there was a huge display of the pumpkin spice pudding mix. I grabbed three boxes because I am sure I will need all of them. Maybe I should have gotten a couple more.

A nice little touch the cookies is the streusel that you press into the dough before you bake. You have to have streusel as part of a fall dessert. So why not have it on a cookie?
I found it impossible to put streusel on top of the dough without it falling onto the parchment paper. I didn’t want this to burn or make a mess so I used a pastry brush and brushed it back into the bowl with the remaining streusel. Just a little helpful tip for you :).
These cookies are so good! They are very soft, almost cakey, and the streusel on top gives it that little extra something. It is a perfect fall cookie. Don’t forget to check out the recipe as well as the blog Chef in Training. It has some great recipes so I am glad I found it!
