Last weekend, I went blueberry and raspberry picking for the first time. Matt, Luke and I spent a very muggy morning at Turkey Hill Farm in Haverhill picking lots of blueberries, raspberries, and golden raspberries (which I didn’t even know existed!). Well, Luke sat in the stroller and played with a cup. I can’t wait until he is old enough to pick with us.
I was excited to bake some desserts with all of these fresh berries. I tend to bake a lot of stuff with chocolate so I’ve been really trying to change things up a bit. Well, one dessert went well, the other…not so much.
Bakeaholic Mama posted a Vanilla Bean Raspberry Tart recipe not that long ago that I really wanted to try. You can find this very easy recipe here! Not only have I never baked with raspberries, I have never used an actual vanilla bean.
The raspberry curd had to cool for at least 4 hours so we took off and went to the lake for a little bit…
We got home and I finished it up by making the dough and baking it in mini tart pans…
They were so easy and very good!
So now I had all of these blueberries that I needed to do something with. Matt requested a simple, old fashion blueberry pie. I have a hard time making it from scratch. I wanted to do a graham cracker crust, but noooo. It had to be a regular pie crust. Ok fine. I used the recipe in the King Arthur Flour Baker’s Companion.
Pie crust hates me. With Luke’s encouragement, it all started ok.
I had Matt roll out the dough because I was afraid I would mess it up. And he should help as it is his pie after all.
It wasn’t pretty, but it worked. We put the pie together and waited for it to bake. I know that as long as it tastes good, it doesn’t matter how it looks…this time.
As you can see, it overflowed, a lot! Also, I let it cool for about 45 minutes like the recipe said, but it was definitely not enough. The filling just oozed everywhere. But, it tastes good! This is one thing I will have to keep working on.
I do have quite a bit of blueberries left so I will be looking for something new to make with them. I also have a few more things I will be working on this week so watch out for them!
