Dessert, Then Breakfast

Dessert first because that’s more fun!

Sundays with Joy this past week was exciting because I had to make something I have never done before. I wouldn’t consider it baking, but it was so easy to make and perfect for this hot weather! I made Dark Chocolate Raspberry Fudge Pops.

Stay tuned for next weeks recipe.  I will be making Chocolate Covered Macaroon Ice Cream…yum!  Can’t wait for that one.

Time for breakfast…

When Luke takes a nap, it would make sense that I would do something productive, such as pick up the clothes that Luke through all over the living room, which were once nicely folded on a chair.  Or, I could finish the assignment for my online class that is due in a week.  Or, I could get dinner started.  Instead, I decided to bake!

I made Blueberry Lemon Muffins, a recipe featured on the blog Joy the Baker.  This is a twist on the Brown Butter Blueberry Muffins I made for Sundays with Joy.

What is brown butter you ask?  The most amazing thing ever!  I had no idea what it was until Sundays with Joy.  You pretty much cook butter until it turns an amber color and gives off this wonderful nutty flavor.

          

The brown butter is an ingredient in these delicious muffins I made.  The recipe did call for poppy seeds, but I don’t have any.  I am not really sure what the point of them is anyway.  It also called for a crumb topping but I chose to skip that.  Gotta be healthy right?

     

So after I finished, I did all the responsible stuff (except dinner).
