Banana Bread

Finally, Friday arrived!  This was a bit of a crazy week.  Back to work with all of the kids, teaching a new class, and Luke starting daycare.  Is it me, or do short weeks seem the longest?  Well I am happy it is over.  I survived the first week and Luke loves daycare.  I have been dying to have some free time where I can bake something, and I did!

For someone who doesn’t like to eat bananas, I have been drawn to recipes with bananas in them lately, such as the Banana Walnut Chocolate Cookie Cake I made not too long ago.  A blog I have recently started to follow, Averie Cooks, posted a recipe for Banana Bread with Vanilla Browned Butter Glaze.  The vanilla browned butter glaze is what really caught my eye for this one.  And since I have never made banana bread, I wanted to give this a try.

Of course, the oven is already pre-heated and I thought I had everything I needed for this recipe.  Until I took out the flour.  Which I was running VERY low on.  And just came home from the grocery store, obviously.  I had JUST enough to make the two cups that the recipe calls for.  I was also out of Baker’s Joy non-stick spray, which is something I meant to get at the store.  So I went old school by greasing and flouring the pan.  This reminded me of baking with my mom when I was little.  And for some reason I don’t remember getting flour all over the place like I do now.  I wonder why.

         

I am so happy with how this banana bread came out!  The only things that are different with mine is I used a 10″ loaf pan and 3 bananas.  I was getting a little nervous because it seemed like it was burning on top and it wasn’t completely done yet.  But it’s not burnt at all and the bread is very moist and tasty.  I don’t even care that it is bananas.  It is that good.  Matt and Luke enjoyed trying it out too, so I know it’s good.  And I normally think of banana bread as a breakfast food so I think the vanilla browned butter glaze is what makes it almost like a dessert.  But, if you don’t want it and just want to have the banana bread as is, it is still very delicious!  Like it is suggested in the recipe, you can leave the glaze off and add it to each piece if you want.

         

If you haven’t made browned butter yet, you must!  Before I started this blog, I made Browned Butter Brownies with Peanut Butter Frosting from Best Friends for Frosting.  Awesome!  I also talk about it in Dessert, then Breakfast.  It is the one thing I cook on the stove that I have yet to burn or set the fire alarms off with.

On a side note, Bakeaholic Mama had a contest to win a crepe pan from King Arthur Flour…and I won! So excited!  It came in this week so look out for the many crepes I will be making.  I have never made them before, so this will be interesting.  As you know, I have difficulty with pancakes so I can only imagine how it is going to look when I try to flip a crepe!

  1. This is the nicest post about my bread – thank you!!! I am so glad you made it, so glad you loved it, and that you made it with 3 bananas and in a 10-inch loaf pan. I actually think the 10-in pan is a great idea (especially since you used more banana) & glad to hear that 2 c flour was JUST enough! And that you love the glaze. I do too :)
